I had the pleasure of chomping through this at a friend’s house and was kind of shocked that it was good. It’s gluten free and i associate that phrase with people who look like they’re having less fun than those of us eating all the gluten.
So here is the recipe exactly as it was sent to me. It is a little ambiguous but half the fun of making it was figuring it out so i’ll let you do the same. I find ‘trying’ to bake goes well with this http://stereomood.com/mood/optimistic. Mixing and beating and measuring and wondering if it may all go wrong, coupled with the ‘optimistic’ tunes left me in fits of giggles more than once. And that was on my own in the kitchen on a friday evening. I would recommend it. At the end you have cake too so it’s even more amazing.

Gluten Free Lemon & Poppyseed Tea Cake
- 120g softened butter
- 120g caster sugar
- 4 large eggs
- 50g gluten free wheatfree flour
- 120g ground almonds/ cinnamon spice/ allspice ( 1 teaspoon each)
- coconut milk as needed
- 75g poppy seeds
- (optional hazelnuts)
- 50g icing sugar
- juice of 4 lemons
- 2 table spoons honey
